Charlotte Restaurant & Lounge sits on the 16th floor of Lotte Hotel Seattle, a luxury 157-room property designed by Philippe Starck that offers more than 23,000 square feet of meeting and event space. Lead bartender John Plascencia says the drink, inspired by Seattle in the spring, is “pink in color, light, fruity, floral, and beautifully balanced.” In other words, if a cocktail can be described as chic, it would certainly be Love for Lotte. 

Ingredients

» 1.5 ounces Roku Gin

» 0.5 ounce fresh-squeezed lemon juice

» 0.5 ounce blackberry syrup

» Splash of sparkling wine 

Combine all ingredients in a shaker. Shake, strain, and pour into a coupe. Top with sparkling wine, and garnish with edible flowers.
